Eggs, grilled tomatoes and smashed avocado

A breakfast idea for rest day

Macros:

This will make a good breakfast for a rest day as it is high in good fats that will keep you full for longer. Also this is vegetarian friendly.

Ingredients:

  • 3 large eggs organic
  • 100ml organic semi skimmed milk (can be substituted for your favourite dairy free option)
  • 100g Cherry tomatoes (about 7)
  • Avocado
  • Your favourite hot sauce
  • Juice of 1/2 lime
  • Organic coconut oil teaspoon.
  • Seasoning to taste
  • Fresh Thai basil (can be substituted with normal basil)

Method:

Remove stone from avocado, put the flesh in avocado in a bowl crush it with fork until 1/2 of it is smooth and 1/2 has texture. Add chilly sauce and juice of the lime.

Heat up 2 pans with coconut oil (1/2 teaspoon in each), whilst the pans are heating up break the eggs and mix it with milk and seasoning in a bowl until smooth. Place the cherry tomatoes in one of the pans, over high heat, pour the mixture of eggs and milk in other pan over medium high heat as the eggs start to cook make sure to mix and fold. Cook until ready (I like mine runny so I get them off pan fairly early). By this time the tomatoes should be slightly brown and skins should be starting to split.

Place all on plate, garnish with Thai basil, and enjoy !
